About Julia Pacheco

Hi, Iโ€™m Julia Pacheco. Iโ€™m a wife, mom, home cook, cookbook author, and the creator behind Julia Pacheco Cooking.

I started sharing recipes because I wanted to help families make simple, affordable meals with everyday ingredients. I know firsthand what it is like to cook on a tight grocery budget, stretch what you have, and still want to put something good on the table.

Today, I share easy, family-friendly recipes here on the blog and with more than 1 million subscribers on YouTube.

My goal has stayed the same from the beginning: to make cooking feel simpler and help you spend less time worrying about what to make for dinner.

Whether you are looking for a quick skillet meal, an easy casserole, a slow cooker dinner, a budget-friendly recipe, or something sweet, I hope you find recipes here that make life a little easier.

How Julia Pacheco Cooking Started

I grew up in Albuquerque, New Mexico, where some of my earliest memories in the kitchen came from watching and helping my mom cook.

Years later, when my husband, Will, and I were starting our own family, money was tight. We relied on WIC and food stamps, and I learned quickly how important it was to make every grocery dollar count.

I started getting creative with simple ingredients, affordable staples, and meals that could stretch further without feeling boring or complicated. Cooking became something I genuinely loved, but it was also practical. I needed recipes that worked for our real life.

I started my YouTube channel in 2019 and launched this website in 2021 so I could share even more recipes with families looking for the same kind of simple meals I was making at home.

What started in my own kitchen has grown into a community I never could have imagined. I am incredibly grateful that I get to keep creating recipes and helping families make dinner a little easier.

Simple Recipes for Real Life

I have dyslexia, so long recipes, complicated instructions, and huge ingredient lists have never been my favorite way to cook. That experience has shaped the way I write recipes today.

I want my recipes to be clear, approachable, and easy to follow, whether you are an experienced home cook or you are still figuring things out in the kitchen.

Most of the recipes I share are designed around the way my own family eats. You will find plenty of:

  • Quick and easy dinners
  • Budget-friendly meals
  • Slow cooker recipes
  • One-pot and one-pan meals
  • Casseroles
  • Simple chicken and ground beef recipes
  • Dump-and-go meals
  • Easy desserts
  • Family-friendly recipes using everyday ingredients

I try to keep recipes straightforward and practical. You should not need a cart full of unusual ingredients or hours in the kitchen to make a meal your family enjoys.

My Cookbooks

I have now published two cookbooks, both created with the same goal as this website: making home cooking simpler.

100+ Recipes From My Home to Yours

My first cookbook, 100+ Recipes From My Home to Yours, was published in November 2023.

It includes more than 100 approachable, family-friendly recipes, including breakfasts, dinners, slow cooker meals, casseroles, desserts, and more.

This cookbook grew directly out of the community that began on YouTube and here on the blog. I wanted to create something you could keep in your kitchen, write notes in, cook from again and again, and eventually pass along to someone you love.

A Little More About Me

I live in Utah with my husband, Will, and our two daughters, Brinley and Macie.

My family has been part of this journey from the beginning. I started my YouTube channel shortly after Brinley was born, and our life as a young family shaped so much of what I cooked and shared.

As our family has grown, the recipes have grown with us, but I still come back to the same question when I create something new:

Would this actually make someoneโ€™s life easier?

That matters more to me than making a recipe complicated or impressive just for the sake of it.

I want the food you find here to be the kind of food you can realistically make on a Tuesday night.
